584: tvrdo vezano i ilustrirano.

Po izgledu jedna doista lijepa i reprezentativna publikacija Prof. Prcela
zivi u Cievelandu, a Dr. Zivic u Zagrebu. Clan je Instituta za drustvena
pitanja "Ivo Pilar."
Dobro je da su se na ovom poslu uredjivanja i objavljivanju te dokumentarne
knjige nasli predstavnik starijeg pokoljenja Ivan Prcela, rodjen g. 1922., i
predstavnik mladog pokoljenja Drazen Zivic, rodjen g. 1968, dakle od svog
su-urednika mladji ceterdeset i sest godina. Prcela je iz Sinja, a Zivic je
rodjen u hrvatskom gradu-heroju Vukovaru. Prcela vec preko pedeset
godina zivi u Americi gdje je radio, skolovao se, osnovao obitelj i bavio se
rodoljubnim radom i pisanjem. Pisao je clanke, memorandume, brosure i knjige
o hrvatskim stradanjima prije i poslije 1945. Vec se preko ceterdeset godina
bavi proucavanjem velike hrvatske tragedije: "Bleiburg" i ostalo. Najvaznija
tema - osobito nakon zgazenog "Hrvatskog proljeca" 1971 bila je bas ta
hrvatska tragedija - krizni put, Bleiburg, kolonesmrti, komunisticki
holokaust nad pokorenom Hrvatskom i Bosnom i Hercegovinom.
Prcela je preveo i izdao dvije knjige Josipa Hecimovica svjedoka iz kolona
smrti s hrvatskog na engleski jezik o kolonama smrti i koncentracionim
Iogorima. To je bilo objavljeno vec 1961. i 1962. a g. 1970. on i prof Dr.
Stanko Guldescu objavljuju Operation Slaughterhouse (Operacija klaonica). U
lipnju 1973. Prcela i suradnici odrzavaju znacajan simpozij o Bleiburskoj
tragediji u Clevelandu Novo izdanje te knjige izaslo je 1995 na preko 550
stranica. Ta je knjiga na temelju brojnih svjedocanstava na temelju brojnih
svjedocansta za prikazala komunisticke vlastodrzce kao koljace i ratne
zlocince. Ta i sve slicne hrvatske publikacije na engleskom jeziku bile su
strogo zabranjene u SFRJ. (Ja sam o oba izdanja Operation Slaughterhouse
napisao prikaze u americkim i hrvatskim emigrantskim novinama i casopisima.)

Na hrvatskom jeziku je u tom vremenu raspravljanja o hrvatskoj tragediji
izisao spomen zbornik cetrdesete godisnjice Bleiburg.' Uzroci i posljedice u
izdanju "Hrvatske ReviJe" g. 1988. kojega je uredio Vinko Nikolic
(Barcelona, 1988, 483 str.) Bila je to jedna od mnogih novih knjiga i
knjizica o Bleiburgu i posljedicama.
Holocaust od kojega smo izveli "Holokaust" - prema boljim rjecnicima
engleskog jezika, znaci "A sacrificial offering that is consumed entirely by
flames" -(Zrtveni doprinos potpuno spaljen). Takodjer "burnt offering. Great
or total destruction" znaci potpuno unistenje. Sinonim je "disaster" -velika
nesreca. Tu stranu rijec mnogi citatelji nece razumjeti... Holokaust je
sastavni dio stare i nove povijesti a zrtve su se brojate u milijunima...

A sto je onda genocid? Holokaust obicno svrsava u tome. Rjecnik definira
genocide kao: "The systematic, planned annihilation of a racial, political
or cultural group." Znaci: "Sistematsko, planirano unistenje jedne etnicke,
politicke ill kulturne skupine." Zapravo u jednostavnim rijecima ~ potpuno
razaranje cijelog jednog naroda. Grcka rijec genos znaci "narod" a na
engleskom rjecnici citiraju za to rijec "race."
Holokaust obicno zavrsava u genocidu kako su to osobito u novijoj povijesti
iskusili Irci, Armenci,Zidovi i americki Indijanci. Operation Slaughterhouse
opisuje holokaust kojega su na Hrvatima izveli jugo-komunisti, Srbi i
njihovi kolaborateri u Hrvatskoj i Bosni i Hercegovini. Cinjenica je da je
glavni krivac za klanie Hrvata i njihove progone bio Josip Broz, po
narodnosti Hrvat. Predgovor prvom izdanju te knjige je napisao Charles A
Willoughby, umirovljeni americ:ki general koji medju ostalim istice da
"britanske vojne vlasti snose moralnu odgovornost" za tragediju hrvatskih
vojnika i civila nakon predaje u juznoaustrijskom gradu Bleiburgu.

Na preko 120 stranica se pise o pregledu hrvatske povijesti,
srpsko-hrvatskom sukobu, povlacenju hrvatske vojske i civila prema Austriji,
izrucivanju partizanima, pokoljima u okolici Bleiburga (u tisku i prema
svjedocanstvima ocevidaca), velikosrpska agresija na republiku Hrvatsku
iBosnu i Hercegovinu. Tih skoro 150 stranica je prevedeno u novoj knjizi o
Hrvatskom Holokaustu, a slijedecih 380 stranica su svjedocanstva i dokumenti
s originalnim hrvatskim tekstom (koji je bio preveden na engleski u OS)
Treba imati na umu data nova knjiga nije identicna s knjigom na engleskom
Ona je samo djelomicno nje prijevod.
Da bi se razumio postanak knjige na engleskom treba procitati opis u uvodu o
radu Odbora za istrazivanje bleiburske tragedije u kojima Prcela razjasnjava
neke krivo shvacene cinjenice.
Ne slazem se s previse kriticnom ocjenom Dr, Zivica o "Pregledu hrvatske
povijesti" kojega je napisao Dr, Stanko Guldescu, Ja kao prevoditelj toga
poglavlja svjestan sam cinjenice da je Guldescu bio preveliki "Austrofil",
all bio je i solidan povjesnicar. Kao takav bio je prvi moderni americki
znanstvenik koji je s razumijevanjem i simpatijama gledao na
hrvatske zemlje. Tome skromnom covjeku koji je umro g. 1990, u drzavi North
Carolina Hrvati trebaju biti zahvalni za njegovo sirenje istine o Hrvatskoj
i Hrvatima,
Razumljivo je da mi koji smo vec desetljecima u dijaspori ne mislimo I
prosudjujemo kao mladi narastaji u domovini. Zbog razlicitih utjecaja mii
drugacije mislimo. Nase misli i zakljucci nisu na istom "valu". Ta
podvojenost u prosudbama se odrazuje i u reakcijama u domovini na knjigu
Hrvatski holokaust.
Dne 4. veljace je u zagrebackom hotelu Opera u Kristalnoj dvorani bilo vrlo
uspjesno pred.stavljanje te
knjige Bill su tu mnogi uglednici, javni radnici, a takodjer i
dugogodisnji mucenici, veterani NDH, robijasi, branitelji Domovinskog
rata. Nisu na zalost dosli predstavnici vladajucih politickih stranaka..
Tom prigodom i kasnije se isticalo da je knjiga ovjekovjecila "Krizni put"
i stradanja mnogih tisuca Hrvata, a u svemu tome zasluzan je Ivan Prcela Ta
je knjiga doista kruna njegovog dugogodisnjeg rada, njegove zivotne
misije O krivnji i odgovornosti Engleza i zapadnih saveznika za
izrucenje preko pol milijuna Hrvata i njihovo stradanje pise se u toj
knjizi, kao i u knjizi Ante Belje: Yugoslavia Genocide: A Documented
Analysis, koja je tiskana u Sudburyju u g. 1985. Povjesnik Nikolai Tolstoy
je u Engleskoj objavio rasprave i knjige o engleskoj krivici za izrucenja
Hrvata i ostalih. Grof Tolstoj, clan glasovite ruske obitelji, sudjelovao
je kao predavac u studenom 1985.na Slavistickom Kongresu u Washingtonu u
simpoziju Drustva za Hrvatske Znanosti i godinama se - unatoc sluzbenih
engleskih smicalica - bavio sirenjem istine o velikoj tragediji u 1945.
Zanimivi su bill komentari hrvatskog tiska nakon predstavljanja knjige u
Zagrebu. Zvonimir Despot u Vecernjem listu od-18. veljace postavlja
pitanje zasto je presucena knjiga o Hrvatskom holokaustu. Tvrdi da se
upotrebljavaju "dvostruka mjerila u pristupu ratnim i poratnim zrtvama u
Hrvatskoj". Za knjigu Ive i Slavka Goldsteina Holokaust u Zagrebu pise
Despot da je imala "velikog odjeka, a pozornost su joj pridali i
politicari na vlasti," dok je knjiga Hrvatski Holokaust gotovo presucena.
0 knjizi Goldsteinovih napisao je opsirni kriticki prikaz Dr Jure Kristo u
Glasu Koncila od 6. sijecnja 2002. Sadasnjim i buducim povjesnicarima
moderne Hrvatske knjiga Prcele i Zivica ce biti dragocjeni izvor. Treba
napomenuti da ce se cista dobit upotrijebiti (uz ostale doprinose) za
izgradnju muzeja i instituta "Hrvatski Holokaust" u Zagrebu ill u nekom
drugom mjestu: Gospic, Vukovar?

There are the made-in-heaven days, when you've got a new show on Broadway, you're schmoozing with 
Meryl Streep and Goldie Hawn, and it's all raising money for a cause dear to your heart. Then there are the 
trying days, when the New York Times balks at
running your ad because your title is too racy. A radical feminist playwright never knows what to expect.

For Eve Ensler '75, the Broadway/Streep/Hawn experience last fall was the payoff for a long artistic and 
political effort. The place was New York's Helen Hayes Theatre. The occasion was a benefit performance to 
raise funds for Bosnian war victims. The event was a reading of Ensler's Necessary Targets, a wrenching 
drama about women and war, specifically about women brutalized in rape camps during the war in 
Bosnia.

"In 1993," Ensler recalls, "I saw a picture on the cover of Newsday of six totally traumatized girls who had 
just been returned from rape camps, and I freaked out. I couldn't believe that rape was being used as a 
systematic tactic of war in the middle of Europe in 1993."

It was an atrocity demanding a response from a writer who has never stopped thinking of herself as a 
radical feminist, and has never stopped believing in a natural connection between art and politics. She 
persuaded a Hollywood production company to fly her overseas to investigate the war experiences of 
women in the dismembered Yugoslavia. "In 1994, I spent two months in Croatia and Pakistan interviewing 
Bosnian women refugees. Then I went back again last summer to Bosnia and spent quite some time 
interviewing women who have worked with rape victims during the war."

Out of that research came what Ensler describes as a play about "an American psychiatrist who goes on a 
mission to `help' Bosnian refugees who have been traumatized, goes to save them and in the process really 
saves herself." After a Necessary Targets reading at the Public Theatre, an official of the International Rescue 
Committee asked Ensler to arrange a benefit performance. Meryl Streep agreed to portray the psychiatrist, 
and other stars Anjelica Huston, Cherry Jones, Lois Smith, John Cullumquickly filled out the cast. "It was

Bon Appetit's May issue is a theme issue entitled "Islands of the
Mediterranean - Delicious Food in Magical Settings." 22 islands are
featured, among them a small, little-known island (islet) of Osljak, located
across from the island of Ugljan. Unfortunately, the article is not posted
on the web.

The article states that Osljak is a mile and a half in length. The "round,
cypress-dotted pincushion in the Mediterranean is so small, in fact, that
New York banker and Osljak native David Valcic can loop it in minutes in his
gleaming speedboat." The story centers on the Valcic family which I would
guess dominates the population of the island. Five recipes are included in
the article: (i) prosciutto, cheese and condiment platter, (ii) grilled
whole fish with olive oil and garlic, (iii) cucumber and sour bean salad,
(iv) mixed bean and cabbage salad, and (v) swett lemon fritters (i.e.,
fritule). The story with photos totals four pages.

These recipes are based on centuries of knowledge and experiments of Croatian grandmothers, with 
sometimes primitive facilities and poor availability of fresh produce and ingredients, but with enthusiasm, 
love for food, imagination and excellent taste. Today, we update their recipes by introducing modern 
technology and much wider variety of fresh ingredients, but at no time has the food been changed in its 
authenticity and taste.

Cuisine is a form of art, like sculpture, painting or music. Every housewife, in preparing food, will add her 
own personal touch to accommodate the taste of her family. Every nation has its own national cuisine, 
which reflects its people, character, geographical position, climate and fresh food availability.

Croatian culinary tradition is versatile and unique. Unfortunately until recently our chefs were more 
inclined to introduce and experiment with cuisine from other countries, such as Italy, France and Greece.

Croatian cuisine was created under the influence of our neighbours, who were our masters for the last 900 
years. Perhaps we should thank them for the richness of our cuisine today. Orientalflavor (Turkey and 
Greece), Italian and Mediterranean flavor (Italy and France) and Northern continentalflavor (Austria and 
Hungary) are evident in the cuisine. For centuries these flavors were blended by our grandmothers and 
eventually became a part of Croatian traditional and national cuisine.

This book has been written in English for the purpose of showing the world that Croatians do have excellent 
cuisine. This is important especially now, when we can finally proudly say that we have a Croatian nation. 
As you will notice most of the recipes come from the parts of Croatia called Dalmatia, Slavonija and Istria, 
for the simple reason that they are rich in variety and availability of the ingredients, especially lamb and 
seafood. This does not mean that the continental part of Croatia is not represented with its fine cuisine.

Dennis B. Valcich was born on a small island of Osljak in the Adriatic in the Zadar Channel. He was 
educated on the island up to the end of primary school. He went to high school in theneighboring town of 
Preko on the island of Ugljan. He attended the Hospitality College in the ancient city of Dubrovnik for the 
duration of three years. He worked in Dubrovnik in hotels such as Argentina and Jadran, in Zadar in Hotel 
Zagreb, in the restaurants Zadar and Kornati and many others.

In 1966 he migrated to Sydney, Australia and worked at Hotel Australia, the Wentworth Hotel, the 
Travelodge and many other restaurants.

Since publishing his first Croatian cookbook in English, Dennis together with his wife Mira, established and 
promoted Croatian Food, Wine and Tourism Festival, the first of that kind in CroatianDiaspora. The festival 
is in its sixth year, held for five days, in top hotels like Inter-continental across Australia and New Zealand.

Dennis has also appeared on numerous TV cooking shows in Australia and Croatia, as well as in all national 
papers and magazines, and demonstrated Croatian cuisine at the cooking school.

Dennis is also personal chef for some of the biggest Croatian business families like, Jim Bosnjak-Westbus, 
Roy Medich-Medich Enterprises, Ron & Tony Perich-Leppington Pastoral Co. Russel Buckley-Hume Doors, 
Ray Begovich-Land Development, Australian Olympic Committy, Volvo-Australia and others.

Dennis has also introduced Croatian cuisine to Australia's top politicians like, Premier of N.S.W. Mr. Bob 
Carr, former Prime Ministers Mr. Gough Whitlam and Paul Keeting, leader of opposition Mr. Kim Beazley 
and Prime Minister Mr. John Howard, and number of other ministers.
