Chapman University President Jim Doti puts on his Chef’s hat and prepares fun and healthy meals with the assistance of guest Chefs. In this episode Brenda Brkusic prepares a delicious, traditional dinner from the Coastal region of Croatia, and brings the Adriatic Sea a little close to the OC. She shows us how to make Brudet (fish stew with halibut, lobster and shrimp in a savory tomato-wine sauce), Blitva (green swiss chard with potatoes, garlic and olive oil) and Polenta (corn meal). Croatia is known for its pristine island beaches, crystal clear waters and picturesque architecture, but we learn in this episode of Cooking for Health and Pleasure that it is also known for great food!

Chapman University President Jim Doti puts on his Chef’s hat and prepares fun and healthy meals with the assistance of guest Chefs. In this episode Brenda Brkusic whips up a traditional Croatian desert called Palacinke (crepes). While Croatian crepes can be prepared in many different ways, this version is stuffed with a sweet cottage cheese filling and includes a secret ingredient that Brenda will share with viewers. This dish can even be prepared the night before, stored in the fridge and baked in the morning for a breakfast that is sure to impress any out of town guest. Good food knows no borders and the OC will surely enjoy this episode of Cooking for Health and Pleasure! Zivili!

    Hi hi!! (Yes, my name is Brenda too.) Anyway I watched both of these videos. I already was familiar with these recipes, but done just a little different. Recipes always get edited, for the most part, when handed down generations. I like to use real Kras brand plum jam,(pekmez od sljiva) it just feels more authentic. I also like to use real Croatian eggs, and Croatian flour, it just tastes better. Anway, I was wondering who does Brenda's hair? I went last week and told Miss Hernandez to give me the Brenda Brkusic look, like on tv. She didn't know who I was talking about, I was like "waaaa?, you don't know who Brenda Brkusic is? the director, chef, dancer, all that?" I was like really surprised. Anyway, I also need to know what conditioner she uses too. I really like the way her flows when she's talking back and forth, and looking for the ingredients. I have a function to go to in April. Thanx everyone!!!
